Also known as eggplant, aubergines are at their best from mid July till September. They have long been key ingredients in Asian and Mediterranean cooking. Fried aubergine slices make great Spanish tapas, while the roasted flesh, when finely chopped is often served as Middle-Eastern mezze. French ratatouille and Greek moussaka are two worldwide classics made with aubergine as a key ingredient.

Made a beautiful Imam, wonderful flavour and texture, didn't disintegrate with cooking!
