Origin -

Fennel is a pale green bulb with feathery fronds. Its an old favourite in Italy with an aniseed flavour. Its a fantastic source of vitamin C, potassium and fibre. Fennel as an essential oil has traditionally been used in medicine to treat stomach problems and inhaling the steam of the boiled fern is said to help relieve asthma and bronchitis. Thinly sliced fennel, lightly dressed in a good olive oil, lemon, garlic, salt and pepper. Simple ingredients that taste really good. Or try it with radishes and slithers of parmesan, with a sprinkle of parsley leaves. You can add it to soup, or chop the fronds for a fish marinade.
